Ultrasonics meters are used when very large turndowns are expected. When the flow can be near zero and many order of magnitude need to be covered. This would require multiple stacked transmitters or flow meters to cover this range using other metering options, and still have a consistent and worthwhile accuracy.
Ultrasonic meters are not perfect and some applications such as multiphase, steam or varying quality, fluid of variable viscosity can be difficult to measure. This could be true with other meter options as well.
